301 Redirect Expired Domain

I've just come across a great expired domain, it's not indexed on google anymore. From what I know I have 2x Options for it:

1) 301 Redirect it to my Money Site
2) Build it out as a separate Blog

Which is the best method for gathering link juice from it?

It depends what you want and your ressources, if you make a 301 directly to your new site you will use the previous anchor text to tell to Google what term you want to rank for so if it related to your category it make help you BUT if you are in the adult market and buy a domain that was used in the manufacturing industry the impact may be less, BUT this option is the easiest way to use these domains, on the other hand if you can create an entire new website and make a 301 from the previous pages to the new ones you will keep the link juice, you can control the anchor text you want to rank for and you will have contextual backlinks that are very, very important to rank your site, hope it helps.
