I might also need an anonymous domain which I have no idea where to obtain.

Dedicated servers are usually unmanaged you can install anything of your choice,, WHM/cPanel default installation comes with all these extensions you mentioned.
as far as domains are concerned, you can use vpn and private email address such as tuta to buy a domain and pay with cryptos.

I think you can start with shared hosting and gradually upgrade to dedicated server
