For plugins I'd recommend using: image compression (Smush or an alternative), cache (WP Fastest Cache), a Table of Contents, Minify HTML. Make sure your site runs fast and smooth on mobile devices. Redirection is good to have, if the need to redirect and track your 301s is needed. Make sure you also set up your robots file and sitemap propely.

I haven't tested it myself, but I've heard good things about Koleti by rockettheme.
Yes, blog / authority site in the future is the plan. I am in no hurry to monetize it tho.
I am really enjoying it. Everyday fixing, updating, optimizing, and learning new things is really what I need.

UPDATE 1.1
It is exactly 2 weeks after I launched my site and I can name what I've learned done so far.
1. Basic SEO = finding the best keywords, low competition, small/medium volume.
2. Made myself a blueprint for tier 1. articles so I just follow the steps and it saves so much time and also my site looks organized.
3. Installed plugins like Imagify, Link Whisper, WordFence + many more.
4. Learned what backlinks are.
5. How to edit my site and build it /to some extent/.
6. Checked the competition
I manually checked how my keywords are doing so KW number 1. is on the 5th page, KW number 2. is on the 9th page, KW number 3. is on the 6th page. The rest is around 13-14 page.
I don't really have a competition, to be honest, nobody is doing what I do or at least I don't see it so only the big sites are there but that is not a problem. I m not entirely sure whether to build some backlinks yet or just wait.

Is the domain brand new? If so - I'd wait. At the most, I'd build some social media profiles and set them up - facebook, twitter, pinterest, instagram, or whatever makes sense for your niche. Put your link there but that's it, focus on the content, internal linking, on page, article structure etc, for the first 2-3 months.For more info, check this article out ahrefs.com/blog/google-sandbox/.
Of course, there are plenty of new sites that rank well and fast, but I'd say it also depends on the niche you're in. I doubt may new sites in YMYL niches will rank in the first 2 months.At any rate, whatever you do, try to make it look natural, as if you're getting organic interest and shares, don't overdo it. SEO is a marathon, not a sprint (most of the time).
After that, I'd start building some backlinks, but for another month or so I'd avoid anchor keywords - just focus on branded/naked URLs for now. Slowly increase the diversity of your link profile so when the time comes to do some more targeted link building, you have the foundation below and you can just build do-follow anchor text links. There are a lot of great articles to read on the topic, but I'd start with gotchseo.com/anchor-text/ and ahrefs.com/blog/anchor-text/

I think starting a blog is the hardest part because you are stepping in unfamiliar water but after you actually cross that bridge, it becomes easier. At least it was this way for me.You are doing great so far, just be consistent. The best way to go about it is write good quality stuff and to love what you write because then it would be natural and would attract good traffic.
Yes, it is brand new as I've said 2 weeks old. My site is not in the YMYL niches. I am planning to create a YT, IG, and FB profiles for my site. Thanks for the info always appreciated. I am sure it will take quite some time but I can see that some of my articles aren't stuck in 15+ pages on google so I guess it won't be THAT difficult to rank them.
