1- I'm still posting 1 video every day yes !
2 - Recording + Edit take ~1h30. But Someone help me on the channel and do 2-3 videos/week

Curious how long it will take you to reach the 100k.. I guess it will definetely take you longer than with the french one (as you said you have a lot competition).
But we both know that Youtube is a long term journey and can be a bitch sometimes. With that said, will be following this journey as i am sure i can learn some new things from you as well. Good luck!

Idk, it depend of your optimization, your content. But there is a lot of people on this niche, so, it will be hard to gain subs. But if you succeed, you'll earn a lot of money with partnership !

Im following your journey and im pretty sure that you will succed in that one as well. But why dont you try to boost your video with high retention views and maybe keywords in the description. Also dont forget to put channel tags bcoz thats pretty important when people start searching your channel. Anyway good luck man.

Hi I have a Technology channel I am a student so I upload videos per week, I started my channel 6 months back and I only have 591 subscribers. So my question is should I change my niche??

Most channels will went viral in less than 3 months. Your channel will still grow with regular upload, but the time taken vs earnings doesn't add up. You no need to change niche, just change your style of presentation or recording...i remember watching slideshow "samsung note 8 leaked" with thousands of views.
