Don't unlist, private or delete videos that contribute to your 4k watch hours. If you bought those watch hours or decided to change your content, wait until the newer videos generate the 4k watch hours.
If you still have those videos you can just list them publicly again. The watch hours will still be there.

I second what @Priince1337 says - keep the watchtime videos until you match it with the content you want to build the channel with.
Alternatively, you can purchase watchtime with an SMM panel to the content you intend to carry on with, allowing you to remove/private the original videos.

To answer your question precisely, it takes 3 days maximum to get demonetized after making the videos private. I tested it in the past.

You will loose monetisation in few days, many bhe members faced this issue as well.
