What is the Open Graph?

Its just an agreed way of adding meta data to your site, to show a certain way on twitter and facebook etc. Originally used by facebook, its been adopted by other companies too.
 
Open Graph is a protocol that allows developers to control what content is shown when their websites are linked on Facebook or another social media platform.
If you lack these tags, then there's a good chance that an unrelated image will appear when your website is shared, or the description will be inaccurate.
 
It's just a silly conspiracy to screw with the closed graphs.

Closed graphs became the shit in the 1980's with Michale Jacksuns, Ronald Regan and Florens Griffin Joyner.

Then Facebook came along and decided to graph the shit out of everyone's personal info. And they called it the open graph.

The Open Graph protocol allows for rich object descriptions that go beyond basic HTML and make it easy to publish richer data like: who wrote a book, the characters in a movie, or the events in a sporting match; or to control how we want our data to look when it's shared on social media.
 
It's an SEO protocol that allows you to set up the look of the share window on different social media. Basically, here you define what users that want to share some content from your site will see once they try to post it on their social media profile. It's good practice to add open graphs as this gives you more control.
