I want to spoof my device.
Google sees that I’m using iPhone.

What can I use the best for this?

I have already VPN but that doesn’t cover my device

do you mean your vpn doesnt work on iphone ?
 
iPhones are very difficult to fake because they are highly secure. If you use Android, it will be easier because there are many developers creating applications to fake the operating system.
 
For Google search easier to emulate via user agents.

But for their other services it might be little different approach require like using emulators or custom tool.
 
iphones are much more complicated in this sense than android phones, if you need to change these devices, you should try the antidetect browser, there you can set any profile settings to suit you
