Bit.ly has amzn.to links you can use that but you need to have a bit.ly account.
If we use bit.ly amazon wii ban us.. using bitly directs is its against there policy
Code a traffic tracker. For example your website is called domain.com.
Develop a script (out.php) that saves the product clicked.
Set your external link to domain.com/out.php?product=1234
Then in your script save your click in a database and redirect them to the product.
That way you can create a realtime overview of all your clicks.

So what I understand from your question is that you are sending organic traffic to your amazon product. You want to know how many clicks you are getting from your traffic. Right?
If this is your question I would suggest you to use pixelfy as it tracks your visitors, Also makes a keyword based links that will boost you Keyword based rank and will also make your traffic look legit. I personally use it for my ads promotions and works great for me.
