I'm going to create my first wordpress+elementor website for blogging. I found detailed instructions and courses on youtube.

But I'm checking out other people's blogs that use a lot of plugins and applications that I don't understand at all. (Check attached screenshot)

How do I learn how to choose the right plugins, etc.? Do I need to take more courses in web development to get better at it?

If you are starting off, better keep it simple, and just use Wordfence, as you only plugin, and maybe a speed caching option such as W3.

You probably have different needs at the moment to what you will need further down the line, so don't worry about it. Just install any GOOD plugins that you might need in the tutorial, but have a look and see what other plugins there are that do the same job, so at the same time you get more experience. Sometimes people have spent years building up their WordPress stack, so don't try to put everything in place if you have no need for them at the start. Which you don't do with a basic WP setup.

only use the plugin needed! if you think you need any function, then get the plugins also

You can find useful information on google. There are many lists that provide best WP plugins. Even WP admin dashboard has recommended plugins included
