setting up cloaking is not too hard, you just need to use a cloaking plugin in your wordpress store and do some of the setting which you will be guided by the support team of the plugin you will be using

And what would you do if Stripe eventually asks for your “dummy store” information about sales or working methodology? What information would you send in case this happens?

I think crypto payment gateways is a solution, just try it, what platform do you use for advertising?

Mostly stripe asks for invoice and real time product picture in warhoure with current date mentioned. Which you can easily get if you have a good chinese supplier in hand and paying him a few bucks for the job.
