How secure is unified messaging?

Unified messaging means that you get a phone number that acts as a fax and mailbox. Now whenever people call this mailbox and record a message, it's being delivered to your mailbox as a wav file and fax messages are converted to pdf.

Let's say you send sensitive data like a cv to this number, how safe is it on its way to you?

They say that everyone can read your email like a postcard.

But this seems to just go to the email provider, is stored there and when you connect to the provider, you do it via startssl or some other encrypted method.

Is that safer than Whatsapp? Or is Whatsapp even unsafer?
