How much information about your device can an app creator see?

Instagram for example. What footprints can they get from you if you're using their app from Android or iOS?

Cookies
Device ID
Google ID
MAC Address

What more?

I'm using BlueStacks and want to know exactly what I have to spoof / clear the data of in order to not leave any footprints for IG.

well if i as a developer i can access your mail id, your device info, your service provider, stat of your data network on or off.

You can do this without the app needing to prompt the "Do you want to allow this app to access your XXX"?

google will not allow your app if you access info without showing to user what you can access.
