First good luck with your Amazon Journey. I'm developing couple of Amazon sites too. my conversion rate is around 6%. In my experience, creating a reason for visitor to visit the Amazon link is important and also using affi links in right places. But since your problem is conversions I wonder if something wrong with your traffic. in my sites they don't buy the product but most of the time they buy something else at least.

As far as click through rates goes, is your issue that a low % of people are going from your website to Amazon? As far as having TOO MANY links goes, I'm not certain that would be an issue? Someone with more experience would have to cover that!
Maybe your competitors has old and established web sites. Unless those are make for Amazon type sites I found it always hard to out-rank. well just hard but not impossible. I don't think sales rate is low just before the target product have low ratings. It must be something else. Check traffic stats. Sometimes visitors could be from other countries than your target Amazon site.
