Is 301 redirected URL traffic (destination) recorded in the google analytics? Or it's the requested URL registered?

You can tag the resolving URL in the redirect with UTM parameters.
e.g www.example.com -> 301-> www.example.com/new-page?utm_medium=301&utm_source=example.com
