They have bots that trawl through sites and count links to external domains. When you do a backlink search for your domain, it pulls together a list from their database of all sites that link to your domain.

Browser plugins, specifically Firefox addons are far superior to apps that try to fake the experience. The reason is that those apps are easy to fingerprint due to not pulling supporting assets in the pages, or in the case of apps, don't report to the stats or crash reporting services.

I'd take down the PBN immediately before your other sites gets penalties. You should wash your hands of the PBN and grovel in your reconsideration request. Start rebuilding immediately because after you discover that they won't rescind their penalty, at least you'll already have a head start...

Watch Matt Cutts' video about manual penalties, he explains exactly what a good reconsideration request consists of. It's a manual process so stay calm and extremely polite.

They did a round of lawsuits earlier this year, too. Yelp sued a law firm a couple of years ago over allegedly fake reviews, but they ended up settling. Really curious to watch how this plays out.

Did you use "Boost Post" to advertise it? If so, that's probably also one of the reasons. It's like paying a blind person to stand on a street corner to hand out flyers. Use Ad Manager instead to better target the potential customers.

Open an LLC in the US and you can get yourself a bank account, credit card and whatever else you need. Having a US presence can be very advantageous.
