About three fiddy. There is no limit to how much u can make since it all depend on the traffic you are bringing! good thing about quiz sites is let's if u have a good quiz and u bring 1000 people x 10 pageviews = 10k traffic so if u monetize it with a network that pay with cpm u are good.
You can choose if you want to bring free traffic or paid .. if free u can choose social media like facebook, ig etc and with paid traffic you can use IG but as a beginner i will suggest you to start with free traffic.

I really have no idea what network give the best cpm but most of them are low for banner cpm so u may do your own research. Yes fb ads and ig can be one of the best traffic sources but first u should do the math and see if you are going to make profits or not and when u make profits that's when u scale

There is no particular answer, it all depends on traffic quantity, quality, performance, ad networks, rates, ad types etc.
It could be $100 per month or it could be $1,000 per hour.
It also depends on what quiz plugin you use.
On my personal experiment with Quiz site + AdSense only + Reddit traffic (doing 1-2 shares per day) it was roughly over $500.
The traffic data was approx 20k users per month, over 500k page views, and roughly $1 CPM.
80% of traffic is the US, 10% EU, 10% rest of the world.
Note, it could've been 2x-3x more if I'd run the experiment with DFP (GAM) instead of AdSense only or/if I'd run native ads etc.
However, the idea was to experiment the hard way, with the AdSense & Social traffic only.

i heard adsense places limits if the quiz site doesn't have 40% organic traffic cause it sees the social media traffic as invalid if there is a big spike is that true?

I run ad server, not single AdSense. Even if you have 100% organic traffic and everything like AdSense wants - it’s still can be risky.
