Adsense Approval Question

I just started my blogging journey because I wanted to add a second income stream to my portfolio.
I only have put few articles on the site for now, all original, all plagiarism free, all my content

That's what I have so far
- terms and condition page
- privacy page
- contact page
- blog posts

How many blog posts would you recommend before applying for ad-sense and what are some of the things I should keep in mind.

Generally, as per my experience site having more than 10 content articles along with necessary pages gets the Adsense approval within 48 hours. Content matters but design is also an important factor for example your site must have a proper logo instead of "my blog" title...

Be aware they would not approve my site (already accepted for the account but had to reapprove the site) they would not do it and after waiting like 10 days I got a message saying they can't review the site due to corona. I guess they have less staff for the manual reviews.

I got the same message. No hint of when they might review it, if ever.

About 20 to 25 posts will be fine before applying for AdSense. Also try to cover topics on which there is less content already.

In addition to the number of posts, you also need to worry about the traffic the site is getting. Even if it gets 200 pv a day, it will certainly get approved.
