What do you guys think is the best way to make profit? YouTube or Music platforms such as Spotify, Apple Music etc...

All of them If you are about to launch music, If you are just posting a regular video, then youtube.

I have a decent gaming channel (monetized), and unreleased music.
I wan't to look into paying for a service from a panel or something but getting more out of it in the long run.

At this point Spotify, hands down.
Spotify is not as saturated as YouTube and way more accesible than Apple Music.
