Should I pick a niche for reviews?

I've seen other competitors that don't have a specific niche, and are ranking well and sometimes better than niched content.
Note: I'm competing in non-english SERPs, the competitors are countable.

they would literally post a review about "top skin care products", and after 6 hours post another one about "top gaming headphones" or "top vacuum cleaners".

my niche's products are paying like only 2% and the average search volume for a product, like "top 5g routers", is 700-1k. so, what do you think?

is it a good idea to do the same, and if not, why?
 
You're going to need a powerful domain indeed to be able to compete in the non-niche broad reviews SERPs, at least as far as the English language goes, but in non-English languages things may be easier. But I'd still recommend to stick to one niche per site, especially at the beginning stage. Plus if you know the niche you're targeting you should be able to churn out the content at a quicker pace than if you had to do a whole new batch of research for every new review.
 
It's always better to aim for niches where you could build some relevance

idk, but the thing is that you have no competitor with a niche, all the websites that rank high are multi-niched ones
going with a single niche doesn't allow me to target as much keywords, and prevents me from diversifying my affiliate percantages, my niche is only 2% on Amazon and the average traffic for any keyword that I might target would be 1k
