Several Niche Channels or just one broad Channel?

If I see lots of mixed stuff in your channel about things I not care about I will not come back. If I subscribe same issue, I sub as I like travel and get noticiation about your other niches, local business etc I will unsub right away.

lately I started to become a Content Creator and so I am going to head over to YouTube.

I am currently creating content for a local athlete(more coming soon), (travel)vlogs and some commercials for local businesses.
I want use YT as some sort of a portfolio for my content creation service as well as my personal space for my vlogs.

So here is my question:

Should I start with different channels one for echo niche? One channel for my content creation service, one for my personal usage with vlogs and one for the local athlete?
Or could I benefit from merging all the content and creating a playlist for each niche on my channel? So I could gain more overall watchtime and followers?

What are you thoughts about the pros and cons for both ways?
