UPDATE:
So here's what has happened a month and a half after the disaster. Let's begin with a recap:
I run three youtube channels all making the same tech niche content but getting it translated into english, spanish and french. The first amazon affiliate account that got banned was the french account for the french channel, for third party content use.
After that, a few days later the Canada and US accounts for the english channel also got banned, however the UK account for that channel didn't.
Also a few days later, my german account for the spanish channel (my biggest one) got banned. At this point I freaked out and personally closed my Mexico, Spain and US accounts for the spanish channels, because they were for sure getting banned and I thought if I closed them myself before Amazon found them I would still be paid the commissions.
This didn't actually work, since a few days after closing them, I received an email that said that the Mexican and US account got banned and I would not be getting payments (weird that they actually investigated and closed already closed accounts)
The only account that didn't get banned was the Spanish one and I was paid the first commissions they owed me at the usual date and currently waiting for the second payment, after which that account will have paid all the accumulated commissions.
THE AFTERMATH
I have started replacing amazon links with other affiliate programs in my niche and the difference in conversion is actually brutal (about 10 times less). The other programs may have higher commissions and longer cookie periods, but I am making around 5-10 times less that I was with Amazon. Just brutal...
I have spoken to a guy running a similar channel to mine in France and he has told me that most similar youtube channels in France have also been kicked out from the program, however some very few remain even though they make the exact same kind of videos (weird but I guess it's a matter of time). I have also noticed that many similar american YouTube channels have started changing their amazon links which for sure means they have also been banned (however the bigger channels seem fine because the keep posting amazon links, eventhough they make the exact same content). The ban wave doesn't seem to affect spanish channels yet...
WHAT MY PLAN IS
The main way of monetizing for my content was actually amazon affiliates. Youtube adsense is pretty decent but it was only 30% of my earnings... I plan to try and contact Amazon explaining that although we use manufacturer videos, we strictly follow YouTube's fair use guidelines and our content is considered original and doesn't break any copyright laws. I don't expect them to allow me back into the program but I have to try.
I'm still looking for help from people who have been previously banned from the Amazon Affiliate program and got back into it, either by appealing the ban or by creating a new account under a different identity. If you have any experience it would be greatly appreciated.
Also if you have any suggestions as to how to monetize a tech youtube channel that can get even remotely close to amazon affiliates in terms of earnings I am all ears... And congratulations if you made it this far reading...lol
