I have a great eBook that I am trying to generate sales for, relating to health and fitness. Do you guys recommend Instagram shoutouts or buying editorials instead?

Dumb question, neither platform is simply going to grant you more sales or traffic. It is a matter of which you can maneuver better or more economically.
 
Did you get your health and fitness ebook launch sorted?
