Google (or any software) understanding human speech remains a dream.

You wildly miss the point here and what you said there has absolutely nothing with what Google is doing. You do know that you can perform voice searches on a mobile phone, don't you?

I just don't get how people can't understand what Google are doing. I've seen a lot of "SEO Gurus" on here think that this update is like penguin and worried about rankings blah blah blah.

It's not. It's to do with how Google is trying to understand what the user wants and how to present that to them. There are a million ways to ask a question that might have just one answer, that is what Google is trying to do here.

It's more about Answer engine than a Search engine

It's not. It's to do with how Google is trying to understand what the user wants and how to present that to them. There are a million ways to ask a question that might have just one answer, that is what Google is trying to do here.

It's more about Answer engine than a Search engine

It's about Google not losing SE traffic to Siri and having Apple redirect that traffic to a rival SE they could partner with, little else.
 
SEO is kind of a joke industry, full of alchemists and fortune tellers.
 
The major thing I've noticed with hummingbird is how much it has cranked up localisation. Same search for something not really locally relevant turn out vastly different results - changed in the first week sept.
Secondly: hummingbird searches "stack". As per the pizza example: where's there a pizza joint in New York? Gives a local answer. Then "organic pizza" would try to find an organic pizza joint in New York. Basically google assumes that the consequential searches are all part of one search session.
