How do you prefer Sitemap.xml for SEO

Hi everyone. I am starting a serious project, of a store, which will contain hundreds of products and blog posts to rank on Google. My question is: How should the organization of a SiteMap be? So that later Google can read it correctly. I have tried different plugins, and there are some that catalog and group the links in different sections depending on where they are ... Example: "Products", "Categories", "Posts", "Pages" ... Is it necessary?

Is not my web !! Hahahaha I use a example from random page with sitemap.xml
 
Google will read that sitemap fine, just let the plugin do it's thing, I wouldn't waste time on it ;)

Yes, if I know, the question is if there is a need for a plugin that does this type of cataloging. Links separated by categories as I show in the images, because there are plugins that do not ... :(:(
