not sure for the search bar but you need categories (folders) for the subpages to appear under

how authoritative does the site need to be to get that search bar...? is it domain age? or number of visitors?

A) You must have the schema markup

B) It's contextual, so it will only show up in a context where Google feels it likely that searchers on that term are probably looking for your your site (or you're the highest authority in that niche) and will likely next want to search your site. Terms like "buy site.com" will often trigger the search bar for a site.

Since we can't control Google's opinion on your site and what keywords it might show up on I suggest we just focus on the Schema part, as randybishop highlighted.

Simple answer authority. When it's called an authority it means everything. The quality of traffic, How submit site maps , How generated sub pages and all on page seo etc.

I personally believe this happens with paid advertising too. (adwords)

I had a site somthing with that related to women beauty . It was PR 3 and never siloed etc but the search is there .
