There are a lot of things they might be tracking. Canvas fingerprint, hardware fingerprint, browser add-ons, user agents, ip address. All in all it's not worth the risk missing something out and getting your accounts shut down.
For Facebook & Google I would suggest always use RDP + a residential proxy (even better, mobile 4g proxy).
Then you're 100% safe, and it's not very hard/expensive to set-up.

you have to take note that they got cookies and caches on your computer so, better be aware of that too.

You should try using different browsers or different user accounts. Or even better, you could run an OS from USB stick, like Linux. In this way, nothing will be saved from different sessions. It won't help you if you're using proxies but the previous data from cache can be read by sites.
