Should I wait until Google de-indexes the expired domain before I take its content? Even though the pages don't exist anymore?

You need to make sure it's completely deindexed

Keep in mind you can still be sued for copyright violation by the rights owner since they published it originally

Worst case scenario is you make BANK with their content and they sue you for 3X (allowed under US law) the amount of money you made
