Customizable theme

Can anyone suggest a theme that is easy to customize I tried to use generate press but I had some trouble with customizing this header the (the logo was too small) I tried making it bigger but ended up making it disappear is there a theme that allows the same functionality as Shopify? I also tried using the oxygen page builder but when I use it my shop page stops working correctly ill click on the add to cart button and it starts taking me to the terms and conditions page but when I deactivate it works perfectly but my entire site gets transformed into this whole other horrible thing all the pages get changed back to the default generatepress version of themselves
 
What you are looking for will require knowledge of CSS and wordpress customization in general.
But it can be also achieved to an extent using modern day page builders.
Divi, Elementor are 2 which I have used and Divi is the one that I used for years.
But Now I have parted my way as most page builders have little or more issue with the core web vitals.
Generatepress & Neve are my favorites now if using wordprress or I just make a custom CMS.

generatepress is the most light weight customizable theme out there. For small tasks that you can't get done yourself, hire a freelancer.
 
There are so many online free themes for website, and coded only on simple CSS and HTML. You can go through them and select and start editing. If any issues further can help you as I use to edit web pages.

I think 1 month for Divi.
Lot's of resources are available on YT.
These page builders work with generatepress also, you can find starter sites that are built with these page builders.
I will however recommend using the built in guttenberg page builder, easy and fast.

I actually started playing with generate press more and figured out how to do what I wanted it to

That's the way to approach any cms framework.
The more you use it the more comfortable it becomes.
