Regarding high ticket sales, do you have any way to know in advance if a company is going to be able to pay a premium price?
How do you detect that kind of businesses?
Awesome question. In my experience, when it comes to high ticket sales the biggest thing is correctly targeting your buyers. Generally, most small companies don't really understand the concept of ROA (Return on advertising) when it comes to instagram marketing. You and I both know it's going to help them but they have serious trouble translate $500+ a month into real value. I'm talking about like mom and pop shops, small restaurants etc.
So to try to answer your question, in terms of finding these companies. I've had the best experience with companies that are generally larger than 10 employees who show that they spend money on advertising. A great place to find these people are through just browsing facebook/instagram and seeing which companies are taking out professionally done sponsored posts --> this means they are spending money, and have a decent idea that it should help them. That's when you come a long and offer a better cost effective solution.

Look at companies who are hiring for SMM, and offer your more cost effective solution
Do you follow a script? Or how do you zone in on the right pattern of conversation? Does it just eventually click?
How do you deal with No's?
Any new cold call I do I always, always have a script. It's best to plan out what you want the conversation to go like and then adapt from there.
Just to give some practical info. Start the call knowing that you have to get past a "gatekeeper" (Receptionist, employee etc). I'll usually be like Hi I saw your guys sponsored post and loved the content, could I speak to the person who is running your instagram. This will A) tell you if they have someone in charge of this or B) they don't and its just an employee. If its A) you can pitch your service as an add on to what they are doing and say you'll make them look real nice. If it's B) you can say exactly how you can help them take it to the next level.
No's are a part of the game. Get very, very comfortable with the word No. Some days I sit at my desk and call for 5 hours straight, I can so many no's it will make you head spin. You can be the best cold caller in the world but at the end of the day its based on conversion rates and if I know after 50 calls I get 2 people interested, then I can just scale from there.
In terms of dealing with a no, if it's a potential client worth pursuing, pursuing, I'll offer to send a follow up email to really show them how I can help. One thing I will say sometimes if I'm feeling courageous is "So you're telling me you don't even want to explore the idea of me being able to bring more customers to your door/followers to your/whatever their goal is/ at a fraction of the cost you are probably paying right now?" This will either work 10% of the time, or they get upset haha (but who cares you don't know them)

I'm selling very expensive services, and I can close easily any deal if I got a prospect in phone. But, most leads I got are not able to pay high prices.
I'm not sure which plateform should I target now, as Facebook ads now is not very successful.
I'd try and target larger companies then, if you are
truly confident in your service and
have a good track record then it will be much easier going for the big dawgs rather than the small fish. The big guys understand you need to spend money to make money, tougher to sell to the smaller businesses.
However, if you are brand new and are charging high prices then welcome to a very tough world of starting out haha. You'll have to be able to provide some type of value for them first before they trust you enough to take you on-board. If it's advertising, set up a campaign and actually bring them some clients. If it's insta set up a competing profile and show them what you could do with theirs.
When you're just starting out you have to break your back a little to charge the high prices, just part of the game
