trouble is HOW MUCH should i put down on a website, and im talking.. how much material should my website encompass?
because i have ideas but they are rather large. for instance, a back website consisting of lots of parts about the back but each part would have to be backed up by numerous articles.. could just see it taking a while

At the moment I'd say the spanish one for the simple reason that at the time of writing this message, it has the least affiliate competition and literally a monkey could generate sales from it!

Obviously the more pages the better, as you'll be able to capture much more traffic and expose yourself to a much higher earnings potential. However, 5 pages of around 500 articles each is a good start.
