You can take stories from Reddit, bundle them all up, and pay someone on Reddit to do a voiceover with it.

Anyways, I wanted to ask if anyone has experience running and monetizing a podcast and if it would make sense to get into it.

So Im actively using podcasts for SEO. Using AI is not going to work for podcasting. Your podcast will be removed as you get going. I know. Ive been doing this for clients for over a year now. THe podcast will be removed with an AI voice.
To get around this, since it literally takes just as much time to turn a script into an AI voice, I bought a mic from best buy for $40 and just record 15 minute voice recordings.
For clients that have video you can just turn their videos into MP3 files and upload those. The key here is using a real voice. SOmething else I thought of was just turning others YouTube videos into a podcast, but then consistency of the voice wont be there.

Buying a mic and doing it yourself is the best way. Unless you wnat a particular accent and have the $$ to spend on Fiverr for something you can do in 15 minutes yourself.

Ah only if one had the recipe for that. When you have professionals it doesn't matter. I work with clients who are all professionals and have a history in the search engines and established authorship for years, or what google refers to as EEAT. When you have EEAT in your niche it doesnt matter what the niche is. You find your space in that niche.
