i would go with cats and there are multiple products and you don't actually have to go after genuine review articles to prove anything. With belly loss and weight products, there is always a risk of refunds, etc in affiliate marketing. But when it comes to pets people usually like the product and word of mouth spreads really fast, I personally don't like cats I am a dog person but I won't mind them if they're making me money lol watching all those pet videos on tik toks and facebook I can assure you have a lot of content pre-made for social media promotions.

Cats will always be in top as it will have more content and easier to drive traffic. Once you lost your belly you don’t need that’s it’s anymore, same goes with coffee, obsession calms down with time.

Weight loss & gain are too competitive I feel. You can try with Cats or Coffee. Make sure to target long tails instead of main kw's.

You can literally get into an competitive niche, and make a little money.

I started a state specific site for one of the most competitive niches out-there, and I just started bringing-in some money in the low hundreds with it.
You just gotta have a unique angle, and be willing to stand the content, long-term commitment, etc.

Depends on your budget and strategy. Weight loss is a shitton of money if you can rank, but chances are you can't. I think cats is a good compromise. But as always, you need to have a realistic strategy and budget in place before picking an appropriate niche. You can't just pick something in a vacuum.

I can go with this niche (weight gain) and doing Siloing, but what I'm afraid of in these niches is the E-A-T & YMYL by Google, and that Google won't rank the site cause it does not have the E-A-T

Lose weight is highly saturated with lots of competition.
Coffee, I wouldn't know how to monetize, unless you have a brand of your own.
So, I would chose cat's from this list (I am a cat's fan).

I agree. E-A-T is still ok, it will impact only your ranking but YMYL google takes it very seriously. Understand them and see how to handle. I'm familiar but don't have enough expertise in these concepts.

+1 for cats. Cats are the best.

All 4 are good, but cats would be less of a rollercoaster ride compared to the other 3.

I would not be afraid to engage in the bigger niche like Weight Loss.

Even with high competition, there's also high traffic. With a little bit more work, the rewards will be better.
Imagine competing with a keyword with the top 10 positions. You just have to outperform 30% of them in terms of article length and on-page SEO.

weightloss 2. cats

I think that any niche is worth going after. Some may be less so. I would also go for the one for which I have the most insight.

Nothing beats weight loss. But it's tought to rank in SERPs. That's the reason why people choose other niches.
