French toast maybe? few slices of bread and 2/3 eggs would be enough + cup of tea...

This is what I’m having - it’s soya, boiled rice, spring onions and red chillis. Quick, cheap and easy to cook. It’s also very tasty.

But for easy dinners I basically just have any vegetables + rice. Normally chilli, peppers, brocolli, or something similar.

Eggs with rice & carrots doesn't sound too bad :) Unfortunately the cheapest soy sauce is about $14, and I never eat it, so that would be a lot of money for a single dish :/ Appreciate the suggestion though!

Hit up your local Panda Express or Chinese Takeout and grab the packets.

Crustless Keto quiche is really good, filling and eggs are not expensive.
this is my recipe for 2/3 people so just cut the ingredients in half/
I also like to put in little cubes of ham or bacon (or if you have leftovers in your fridge, just dice them up and add to it.

8 large eggs
4 T heavy whipping cream
1 cup shredded cheese
1 tsp Garlic powder- to taste
1 tsp Onion powder - to taste
1 tsp each Salt & pepper
1 tsp celery salt

1 small zucchini diced >or ham or leftover or any veggie or bacon<
1 small onion diced >don't have to ... just add some flavoring<
1 tomato diced

Basil & oregano - to taste

Preheat oven to 400 F. Saute all veggies with spices in a medium cast iron skillet until cooked down, turn off heat. In a separate bowl wisk the eggs and whipping cream, then mix in cheese. Pour egg mixture over the sautéed veggies and stir to combine. Sprinkle with basil and oregano. Bake at 400 for 25 minutes. Let it cool for about 10 minutes before slicing.
