They don't have to know about your income if you go the crypto way. There is a lot of options if you have BTC, you can make purchases online (if not directly with BTC, then with giftcards), you can buy gold and sell it for cash in pawn shops, you can reinvest it to make more money as many hosting/social media/marketing providers accept crypto.
However, keep in mind that it is not legal and if you decide to do this, you still have to act smart. For example, keep in mind that crypto exchanges are willing to share information with IRS if they ask and BTC can be easily traced back to exchanges.

Look into tax avoidance (not tax evasion). You still need to pay taxes, but it'll help you pay the least amount possible.

That really depends on your country, USA taxes you by citizenship, so you're basically fucked if you're an US citizen.
If you're not you can relocate to countries like UAE.
There's some tricks you can use to pay a lot less taxes, but the only way to pay 0 taxes is to relocate to a tax-free country.

There are tons of legal ways to avoid taxes,
Do your research and you'll find plenty of ways especially if you're going to set up a business (You can form a company in Cyprus, Malta, Hong Kong, UAE, Seychelles... but you'll need guidance and do your homework),
If you're into something shady business, I can tell you from now that BTC is not anonymous,
And even if you use Monero you should know the right way or you'll be tracked easily,
You'll need a complete anonymous company / EMI formation (Provided by some services) so you can receive and use the money anonymously,
But you'll need to know how to access the money and use it without revealing your real identity online.

The best way to avoid taxes legally in the United State is to operate as non profit organization, I really don't know about other countries.
