It's the simplest alcohol to make on earth (and probably the oldest ever). You can't go wrong with it (Worst case, you end up with vinegar.. good quality one). Youtube has awesome tutorials about it. Go through them, you will like it.
My favorite combo:
1.2 l of great honey (Get the best you can. That makes a good one. Only raw honey).
5 l water

.. )yeast but feel free to use anything if you need alcohol content to be less than 12%. Even bread yeast works (but the flavour is a bit off for my taste).
Edit: Oh the aromatics..
I use 4-5 sticks of cinnamon , 1 cup of strong Darjeeling tea; a few slices of ginger and lots of clove; for flavoring. Boil them all in water for sanitizing them, and put into your mead.
I dunno the abv. I don't measure it. I have it for taste, not alcohol (mainly that is).
