You can't change the 'logo', is not a logo is the preview of the most popular posts in the hashtags, so the only way would be if you posted your logo without your hashtag and then made it the most popular post in the hashtag,

You cannot change the logo, it’s always a picture from the top posts. It’s pretty good to own an account that is also a hashtag and you can use this to your own benefit, but a hashtag is not something you can own.
