In order to join them, you need to pass their approval which can be tricky for a movie site, and if you get denied it will take a while to apply again and other networks will know you got denied. I would not apply with the movie site unless you have millions of traffic daily and can show monetary value to ad networks.

What are your thoughts on creating a single large platform for multiple niches and directing traffic per relevant page vs lots of niche-specific sites? Is there the ability to use different ad providers on specific pages for a large multi-niche site or are ads generally sitewide?

You decide what ads you want to run on your site and on which pages of your site. You can set ad units of a specific network on a specific page, however, this setup will not be able to squeeze maximum revenue. By setting a single ad network on the page will make that ad network buy all ad impressions at the lowest price. If you have multiple competing per each ad impression ad networks on the same unit - ad networks will have to pay higher bid, therefore, make you more money.

The ads that visitors see are based on user history, browsing habits, etc - advertiser does not show ads blindly, so they target specific users with specific ads.
