I use yoast for SEO and google sitemaps for the sitemap. just uncheck the sitemap box in yoast
They each have their benefits. I like Yoast because it breaks up pages, posts, and categories and it notes how many images are on the page which can be helpful for getting indexed in Google image search. Yoast DOES NOT auto-submit to webmaster tools (to the best of my knowledge), so you'll want to make sure you manually submit all 4 sitemaps (index, page, post, category).
Google Sitemaps is a little less involved. It automatically submits to Google which is great if you are in a hurry and it isn't critical to squeeze the most out of the site.
For sites that I really care about, I use Yoast, but for bulk sites, Google Sitemaps is my choice.

Both Google and Bing understand the sitemap index structure and you can just submit the sitemap index if you are using Yoast, the crawlers will crawl the other sitemaps referenced in the index and they show up in the webmaster tools. But you should submit the sitemap index to both of them. The problem is most other crawlers look for sitemap.xml and in the case of Yoast this file does not exist. In that case you can do a 301 redirect and point them to the Yoast sitemap.
You can also add a line in your robots.txt to say "Sitemap: hxxp://xyz.yourdomain.xyz/sitemap_index.xml"
Plenty of ways to skin a sitemap.
