Config: 8 gb ram, 4 gb nvidia, i7 3rd, 256 gb ssd. Laptop is running win 7.
OS is installed in SSD.
That happens around 4-5 times per day and it gets super laggy and I had to struggle to move the cursor and click "Restart" and then it becomes okay.
How to fix?

Well mostly it is a broken os, try to download a proper fixed os , the one you may have probably it is corrupted

Been using it for years no viruses or anything its the free version all versions in 1 cd , scan it if you want dont really care , the point is you have a corrupted os . install a new one , update drivers and for god sake if you dont need the updates do not do it. for me its way faster without the updates then with them, ( i install updates my pc goes slow and shity ) no updates works fine.
Also i would advice you to go with windows 10 with those specs , your pc can handle it preety well , or better yet go with linux <( if your programs have compability with linux )
