What are the differential factors for which you pay for a $700-1000 domain?

Age of the domain? Links? No jumps? Domain authority? Indexed pages?

I see paying for real bogus domains with no indexed pages and with jumps but I can understand why

yes, also there are other reasons such as:
- brand name - say nypizza.com, how much do you think it could fetch? could be >$1k,
- how many buyers, the more, the merrier,
- simply a big pocket buyer, not all buyers are SEO, some are domain flippers too.

If the domain is bought as expired it will already have jumps and in that case the antiquity of the domain will not be considered true?

correct - bought as expired, in other words this is a new registration, not a purchase, unless you buy from a domain flipper (with a 1 year registration).
in that case you should lose most of the SEO benefits, if you register today versus buying a 10 year old domain.

1. Unique Brand Name
2. High DA Backlink
3. Domain Age

I totally agree with you. These three factors Unique Brand Name, High DA, and Domain Age play a major role in setting up the price of a domain high.
Creating a unique brand name requires a lot of work, like playing with multiple names along with keeping it short and searching its availability.

Premium domain names are more expensive than other domain names because of what they bring to a website. A premium domain name is an instant online brand. This means money and time saved on marketing. Otherwise if DA and PA is high then prices high too.

For me would be potential to brand a domain. Now even hard to buy good 6 or 7 letters domain that can be branded.

I imagine that these prices will be for trademarks, because domains without antiquity, without links, without authority and with these prices ... I thought there was something I did not understand so that people came to pay so much money

just look on say namecheap when you search for premium domains how much they cost new.
with expired domains it can be many reasons, like the backlink profile, niche+keyword for EMDs, authority and so on.

Think about it like this: If your website is the house where you design it the way you desire, the domain is the address. And you want to have your house in one of the most prestigious addresses.

Brandable domains are like plots likely to boom in coming years.

In the case of the example domains I have posted, who or what determines that that domain with the same AD, links and age is worth this amount of money difference than a newly registered one?

I pay higher price only for emd brandable domains. There are still many users who search for name.tld to find services. Not a big bonus for ranking but for direct traffic its great.

A lot of times you're paying higher price for the links it has from high authority sites.
