Hello everyone, I am doing seo but I realizes that Sometimes a site grows fast in the beginning, but after a while, everything drops suddenly.

What causes this kind of rise and fall in rankings?

Because Google catches up to it. Tricks if followed by many to fool Google, gets noticed by google fast and then it brings countermeasures to punish or avoid the trick.
 
Some SEO tricks work first because they exploit gaps in algorithms, but once Google updates or detects patterns, those shortcuts lose power. Long term only quality content and natural links stay stable.
