It depends what you're doing but generally you want to keep it fast and simple to keep your visitor focused on your content without many distractions

If you're creating a blog, the type of theme you should choose is dependant upon what would appeal more to your target audience. For example:

If my target audience consisted of older people, I would use a theme that focuses on user-friendliness>speed>style
If my target audience consisted of millennials who are accustomed to instant gratification, I would use a theme that focuses on speed>style>user-friendliness
If my target audience consisted of hair dressers or hair dressing clients, I would find a theme that focuses on style>speed>user-friendliness

Being fast and user friendly doesn't mean it can't be stylish. But as the guys above say it all depends on what your user wants.
