What type of AGREEMENT to create?

If I were to make an website for a local business, what type of agreement should I make him sign to pay me when I deliver the site? Like he cannot deny the agreement or try to lower the payment amount at the end?

How much are we talking? Even with a contract, anything less than 20k isn't worth the time, money, and energy to sue imo.

I haven't freelanced in quite some time, but I almost always did half or full payment upfront.

Price not decided yet. But it is a ecom store. I am asking how to create the agreement? Like writing a pdf and then printing it out and then signing ?
