What to do after unpublishing?

A very simple question, if I remove a post that is indexed and already getting traffic, do I remove sitemap from search console and add the sitemap again? Or search console will give error?
 
301 redirect the url to your homepage

Do the 301 redirect, as Zombie Pop suggested.

Then use this form to remove the removed content away from the search engine:
https://search.google.com/search-console/remove-outdated-content

Then ping the removed URL too. I wouldn't bother the sitemap as Google will automatically crawl it.

Let's say I just delete the post but do not 301 redirect. Will there be any issue?
 
Or can I edit the current post and change title, url and content? Would it cause any problem?

Are you planning to add a substitute page for that removed page? In that case 301 should be applied to the substitute page and not the home page. Also do not need to remove sitemap and re-submit as Google will anyways understand the 301 redirect and will find the new page automatically.

Editing existing page is fine as long as you do not change the url. It will change the permalink and the new url will be considered as an altogether new page. All the traffic and rankings of the old (original) page will be lost and the new page will have start from the scratch. So never edit the url of a page already in ranking.

Theres another post with no traffic. My VA made a mistake. Page is indexed tho. If I completely change the headline and URL, will it be any problem?

You can change the URL but even in this case, you should apply a 301 redirect because the page is indexed.

Since the page is not having any traffic there shouldn't be any loss in terms of views and ranking.
