honestly one thing nobody here mentioned... check the sites that already rank for your keywords and see who links to them. thats basically a shortlist of places that google already trusts for your niche. way faster than guessing.

for the relevance vs authority question earlier, i'd take relevant over high DA every time when starting. a DA30 blog in your exact niche does more than some random DA80 general site. context of the link matters more than the number imo.

and dont stress about anchor text distribution too much early on, when you only have like 5-10 links you cant really "distribute" anything anyway. that becomes a thing later. just keep it branded/naked mostly and youll be fine.
