I'm now a @Festinger vault member and have been updating a site. Would like to know what the BHW community thinks is the best SEO plugin and also a plugin for image optimization?
What do you think is the best WP plugin for SEO and image optimization?

There are plugins you can use to build your site such as follows.
For SEO: Yoast SEO, All in One SEO Pack.
For Image optimization : ShortPixel Image Optimizer and Smush Image Compression and Optimization.

With @Festinger in place, just go for Rank Math Pro for SEO management, and for image, it's a bit tricky because there are no free or easy on premise options, except for Cloudflare which manages most assets for you including image compression and CDN for free.
The best thing here is generally go for a cheap LTD for image compression that may satisfy your for a while if you don't have a ton of images to optimze. Many people just opt to do this locally or manually with a software like iCompress (Mass Image Compressor)

I personally use Yoast SEO premium. But there are other tools too like Rank Math. All In One SEO etc so you can try and check which one is working best for you or which is comfortable for you.
For SEO - Yoast SEO and Rank Math
For Image optimization - ShortPixel Image Optimizer and Smush.

Rankmath is better than Yoast so select that one.

I have been using Yoast for long time but since I came across RankMath, it just blows my mind. There are some features you wont get in Yoast or AIOS.
For image optimization I would suggest you to make it resized in your pc with paint and then upload the required file. I don't use Smush, Shortpixel, Imagify plugin. These are the best practices. Thanks.
