My site keeps getting attacked by 302s from spam sites, and now some of the domains are using my headers with logo and name with metadata... anyone else face this problem

You are specifically targeted my friend. Were you into Ads campaign? Or ranking on SERP?

highly douted as they have redirects going to many other different types of sites. it all seems to bulk AI spam rather than manual work. Im ranking in SERPs... the adult niche is so dirty i swear, this stuff never happens with my other sites

You can block 302s from htaccess and you should follow them from ahrefs or semrush and constantly disawow them.

Check your server logs to identify the reason and be careful in future.

One of my friend had experienced this, but what we did is reporting those spammy sites to Google and other search engines. Then, adding up website's security with things like firewalls or security tools.

Your website is facing a spam attack where other sites are sending unwanted redirects (302s), some even using your logo and name. To fix this, Strength up security with strong passwords, update your site software, and keep an eye on and block suspicious traffic.

Better report those spam sites to google and use canonical tag to avoid copy content before others use your content. use canonical tag as soon as you can before your spammers using if someone used your content with canonical tag before your content may reported as copy content. Good luck hope everything will be recovered soon.
