Hello, I launched a conversion campaign in FB since around 24 hours, I find both men and women in statistics (50/50)! even I have selected just women in gender section!
I think that it's a system bug. I suggest that you start another campaign and check if the problem continues.

Is there a large number of male capacity available? Have you checked your pixel settings?
 
You should check your pixel again, sometimes Facebook's algorithm shows insights based on your estimated data or cross-account behavior and especially you should check your target audience settings towards it and if it's still normal it's probably the system.
