I met people that were doing something similar, except they made high-quality videos but still slideshows, and they were good with linking straight to the Amazon

I do not added my channel, but my spun site to the list. I guess Amazon does not like slideshow videos much.

When they manually review you will get banned as they will see youtube a refferal check your channel and ban

In this case, just need to make a normal review blog, develop it for several years, and do not try to go the easy way.
i think that you are just lucky than other people doing it. I guess it still a long time until you got a sale, because view is not too high ?
But putting amazon link is working since i do noticed youtubers still put amazon link in description so their viewers can choose on stuff like camera, tripod, ... that youtubers use in video
