Lot's of non-native speakers say dear and sir, it's just because they are commonly taught words.
I don't think you should take offense to this.
Dear doesn't even necessarily have romantic connotation.
It can be used interchangeably as both an affection as well as a friendly term.
They're just words.

I think it's something people do when they try to convince people that they're female. The thing is, real females don't typically go around calling everyone, "Dear".

I understand that, but I'm a man. If you're also a man, and it's unknown as to whether or not we play for the same team, so to speak, then you should not be calling me that.

It sounds strange to me when I am called dear too, but your upbringing and cultural beliefs is what dictates your opinion on this matter.
We're dealing with an international community here.
Lot's of different cultures who simply don't think the same as you, or me.
